nginx -s

-s signal      Send a signal to the master process.  The argument signal can be one of:
                   stop, quit, reopen, reload.  The following table shows the corresponding
                   system signals:

                   stop    SIGTERM
                   quit    SIGQUIT
                   reopen  SIGUSR1
                   reload  SIGHUP
